I do love a pizza every now and then, a fresh one, not a franchise one, but restaurants are not going to use the organic extra virgin olive oil that I use when I cook. Or I use organic virgin coconut oil. Oils are very important for health. As a vegetarian, ethnic cooking is more appealing to me since the American diet is meat based. I just don't like mac and cheese and potatoes that much and they don't have much nutrition. For nutrition, I prefer Mexican or Indian food. They are full of plant proteins and lots of fresh veggies. I made a salsa verde from tomatillos, cilantro, roasted jalapeno, and sweet white onion. I'm having that with an organic avocado, organic corn tortillas, and Mexican white cheese. I made some pinto beans with butternut squash that dissolves into the bean juice and gives them a rich texture and gives me vitamin A. I'll make some brown rice with turmeric to make it yellow. I saute the rice in coconut oil before I add the water, and the grains come out nice and separate. Yum. Rice, beans, fresh salsa, fresh cheese, organic corn tortillas...that's eating!!! Your dressing sounds yummy! I love food posts. Eat a handful of sunflower seeds a day for zinc and use real maple syrup for sweetening for the selenium.
