And quickly [/quote] Back when I hunted a lot, I made venison jerky, a favorite snack for my kids. I cut into strips, soaked for an hour in a solution with soy sauce, liquid smoke, and spices. Then I dehydrated in a food dryer. You can do the same with lean beef. I would not try this with pork. Poultry only if you slaughter it yourself in a clean environment. I have not made it, but you can make jerky into pemmican with beef tallow, berries, etc. It's supposed to keep for years. BTW, on my deer lease I became pretty good at skinning a dressing deer and hogs. A few guys would let me do the work for them while they drank beer. I would usually get a quarter of the deer for my trouble. One guy only wanted antlers. He gave me his entire deer a few times. If there are places near you where people fish or hunt, you could offer to clean, skin, etc. for a portion of the meat. Organic, free range, the BEST! [/quote]
