I make 2 quarts and refrigerate the rest of the soymilk. I usually use it to make soy kefir... and I am out of that.. so todays 2 quarts will go into my milk and rest fermented as kefir. I ferment that in quart jars only half full and then after its fermented...I had any favorite pureed fruit to the top and let it ferment a bit more and put in fridge.. My favorite fruit in this believe it or not is black grapes... makes a gorgeous purple color... But I like any fruit in the kefir that I like otherwise... except bananas and apples.
