I seen this thread 5 or so months ago.. did not make the change until about a week before xmas.

WOW. this is true, the fat literally melted off my body, and my muscles did not melt. i do moderate running, and moderate stretch band weight lifts.

i have a small layer of fat left.. i can tell, it's going to be gone in about 1 n a half months. yes, more energy, and a better mental clarity. i should work on eating higher fat now.. my carb content is very very low.. absolutely bread grains.

i got my rule o thumb, max 100gr. carbs a day.

so, beer is still allowed ;)


keepin my ideal weight since then, started working out again.

no more avoiding the mirror - embrassing it :)

It looks like taking apple cider vinegar would be a nice supplement to this way of eating. It seems to have a similar effect in reducing insulin spikes.

Happy new year everyone

Quick question in regards to beans eg red kidney beans etc are these ok to eat in small quantities.

Many suggest they are very nutritional and a protein. Although i notice they are fairly high in carbs if you eat too many.

Are there any alternatives at all for pasta or rice?
I've read in a thread about cake sponge bread can it be bought in the uk cause i'm not too sure what it really is accept for sponge for cakes?

I don't know if this has been covered in the thread, but how about this? - When making hummus, [know it's not the best example carb-wise] with canned chickpeas, lemon juice, tahini,[better, i think, with toasted sesame oil] and so forth, you can stand there at the food processor and drizzle in ridiculous amounts of olive oil, more than you'd believe, and it will still stay an emulsion. Since fat seems to magnify flavor, the flavor stays fairly undiluted, in proportion to what would be expected, anyway.

I've noticed that salt flavor seems very magnified with high fat content of a food. this leads me to wonder how much salt people may unwittingly ingest in low fat foods, because it would go undetected?

I bet you wouldn't have to use the second potato and could double the olive oil, but haven't tried this recipe either way yet.

I almost pissed myself laughing when I read this story:

The gist of the story is best summed up by this line:

"Teenagers in England are eating less fatty food and more vegetables than previous generations - but some are skipping meals to lose weight, according to research."

OK, great news eh? So why on earth are they getting fatter and fatter as they eat healthier? To the point that they are having to skip meals to try and lose weight?

And why be critical when they are eating healthy and trying to watch the calories too? Surely the cause of all our obesity problems, at least as we have been lectured to over the last 30 years, is that people are eating too many fatty foods, too few vegetables and too many calories? Yet when they eat healthy and watch calories they are getting obese!

What does that say about healthy eating (less fatty foods and more veggies) and calorie control?

Hmmm ... perhaps eating healthy isn't actually so healthy?

What it does show is that acting to cut carbs before they totally mess up your system can lead to a lifetime of sensible carb eating without the problems associated with carb abuse.

That's the advice I give the youngsters in my family. Some are even beginning to listen. My oldest boy started drinking cider (sweeter with much more fructose) instead of beer and quickly noticed that his middle expanded. Easy to notice since he was so thin before. He has gone back to beer and it has dropped off!!

The smallest little changes early on in life can be hugely beneficial, but unfortunately once high blood sugars, high blood pressure, high cholesterol, etc start to kick in then carb abstinence becomes the only option to maintain health

Came across this one today. Very important find if there are any MS sufferers reading this. The gist of all research is that the sooner an MS sufferer begins a very low-carb, high fat diet, the better the chance of an all out cure.

What an MS sufferer can expect when eating this way:

1) A full cure from the disease, which often happens provided the disease has not been of long duration. On occasion, a cure has been possible in individuals suffering for as long as 5 years.

2) A halt in the progression of the disease (always).

3) An improvement in the physical condition and a reduction of disease symptoms (to a varied extent).

4) An elimination (practically total) of new attacks of the disease provided the optimal nutrition is continued indefinitely.

5) Achievement of the highest degree of resistance to all sorts of infection.

Not an MS sufferer, but I can certainly vouch for No 5).

In nearly 4 years now of eating this way I have not had ANY major infection (cold, flu, upset stomachs, etc). Even when I have had anything it has been nothing more major than a sore throat or a runny nose and this has cleared usually within a few hours of onset.

This is despite being surrounded almost permanently by sick people (esp. kids with having kids). In fact I think I have put myself at more risk to try and see if I acually catch anything ..... but zip, nada!!

All covered in this thread ... especially the early few pages. The last 8-10 pages have lots of examples of people who have greatly improved their cholesterol by ditching carbs.

When you eat low-carb typically 4 things happen:

1) Blood sugars dive
2) HDL soars

i will actually have a nice looking beach body by spring.. first time ever..

i also noticed.. while fat on top my muscles melted away.. my thigh's are getting smaller, and my butt fat is in good ratio.. which means i had fat under my muscles since i was about 14.. 27 now, and its finally starting to disappear. no more man boobs either.

no longer have infrequent rash/bumbs on certain parts of my body either, the scarring has healed up also with help of shea butter.

I want to add that I've been eating like this for 5-6 years and went from borderline plus-size (Like size 12-14) to a skinny size 4 eating like this. 2 years ago I got pregnant, gained 40 pounds, and lost all the baby weight by the time my kid was 4 months old... It really works.

Watch, you'll probably lose more weight by shocking your system like that, lol!I had fresh spinach on a pizza a few days ago and wow was it good! I've decided to take a break for awhile from this diet. Due to a couple of reasons;

-I’m exercising more and feel like I need more food/energy.

-I need a break from the routine & the repetition of foods I’ve been eating (bored-need to research new recipes, but they need to be quick & easy meals, ‘grab & go style’)

-Last few months I have been in a stall & I’m getting frustrated with my ‘lack of success’ (lose 2-3 lbs during week, gain 3-4 over weekend) I.e.; I’m very strict during the week (while at work), as soon as the weekend starts about 50% of my meals are ‘optimal’ (I like pizza & beer, tounge, arrrgh, this American culture!!!)

So, I’ve gone back to calorie counting but as soon as I started eating more than 100g of carbs. I have felt awful (immediately gained 5lbs, very bloated, etc.)

I’m looking for a few recommendations on a better balance. I currently weigh 275 lbs. & need to drop to 225 lbs very quickly (ideally by 5/25, may not be realistic, I’d settle for 240!!). I started to do a combination of P90 & some walking/jogging. I’m trying to loose the weight before I go to full running so I don’t destroy my joints/knees. & I’m 46!! (I’m not fat, most people would guess I’m around 225 at first glance, I’m very large framed-played football & wrestled in HS & college).

Last year I was 282 dropped down to 254 by following this way of eating (thanks Scorp.!!) & then put it all back on.

I start off this year at 281, after 3 weeks I got to 272 & then got sick for about a month. This has set me back on my planned schedule of getting to 225 by 5/25.

Bottom line is I’ve lost focus & could use some inspiration/advice. Thanks

Just wanted to offer some encouragement. Seems like a bad time to get off the diet. Seems like what you need to change up is your weekend routine.

Get back on the hf/lc diet. You should be able to lose 10lbs. a month on it. Think about how long it took you to get to the size you are now and how long you have been that size. Put it in perspective. Don't place a time deadline on your weight loss. Just keep as close to the proportions as you can without being overly rigid or punitive of yourself.

Cut back on the beer. The pizza. Just eat the toppings, or take the toppings from two slices on to one crust and don't eat the edge crust, just the under- crust.

Switch to distilled spirits for your alcohol. My favorite happens to be scotch on the rocks with a splash of water.

AS far as boredom and repetition. Yes, you have to change things up and add things to keep it interesting. With that said, though, I have been eating the same thing for breakfast nearly everyday now since I started this diet in mid-december 2010. I take bacon and cut it into bits. I just keep the package whole and chop of the entire slab of bacon, not cutting up the individual slices. I get the bacon sizzling. I add in a bit of onion and different peppers depending on what I have on hand. When the bacon is cooked the way I like it, I dump in two or three eggs beaten with heavy whipping creme. Then I layer on some cheese. Sometimes I take a big bowl, fill it with greens and dump the bacon/egg mix over the greens; sometimes I just eat the mix. Either way, it is high fat and it is the largest meal of the day. That is the key. Make breakfast your largest and fattiest meal. You will know you are eating enough for breakfast if it takes a solid 6-7 hours before you feel hungry again.


Grab and go stuff:(like from grocery stores or delis)

Cheese curds. Chicken thighs. Get a pint of 1/2&1/2 and drink it. Salad from salad bar with fattiest stuff, like olives and cheese chunks and fattiest dressing,(no croutons). A good antipasto salad is high in fat. Nuts are good for fats. One of my favorite snacks now is pork cracklins, which is fried pork skin. Just a handful of them is amazingly filling. In fact, a pint of 1/2&1/2, a little package of cracklins, and maybe a little package of fatty nuts would actually be a pretty good lunch.

Keep trying. When you go into grocery stores, delis, or restaurants, you are hunting for fat. Make it a quest. Have some fun with it. Focus on what you are taking on rather than what you are giving up.

And again, don't set deadlines! Give your body and brain time to adapt to the changes and you have a better chance of making it for the long haul.

I am not knowledgeable regarding issues with collagen.

However, I wouldn't think 1 tablespoon of heavy whipping cream in your eggs would pose a serious threat, unless you had a specific health issue. It does add a nice amount of calories from fat.

Organic Heavy Whipping Cream is the best because it has 0g of carbs & 6g of fat per tablespoon. I'm not sure about 'collagen'. I read somewhere (cant find link) that it can contribute to thickening of the arteries.

Heavy whipping cream (organic) goes great in your eggs, in your coffee, in sausage gravy (no flour needed), over sauteed brussell sprouts, spinach or kale (with butter and a bit of bacon or bacon fat), in smashed califlower with butter, chives and garlic, in soup with asparagus, leeks and some chicken stock, and mixed with chunked blue cheese and a bit of cider vinegar and black pepper for the best salad dressing you ever had.

I love this diet! If you follow the ratio's and fat fast to break any stalls, you can't help but be successful. A year and a half after starting this diet my size fours are becoming too big and I feel great unless I cheat and eat a cupcake or something stupid! But even then I have learned I can have carby treats now and then if I really want them. I don't feel deprived or worry about overdoing it or cheating for long because the joint pain and stomach bloating that comes with that little piece of cake remind me to get back to the proper ratios of fat and carbs fast!

Recently I discovered Hardee's low carb breakfast bowl! It is pretty tasty when I don't have time to make breakfast or if I run out of bacon at home. It is a big bowl of eggs, sausage, cheese and bacon that will certainly keep you full long past lunch. Another discovery...duck fat! OMG! That stuff is the bomb! Also....baba ganoush, which is like roasted eggplant hummus but so much creamier than bean hummus!

My younger sister is in town visiting. At 200 pounds, and with 3 angioplasty procedures under her ever widening belt already, she is in misery. Facing a life time sentence of blood pressure, cholesterol, IBS, and antidepressant meds, she is feeling hopeless and literally too tired to get up off the couch! She is on 8 prescriptions and her massive stomach looks at least 8 months pregnant. She should be the poster child for metabolic syndrome!

I spent much of the day trying to explain to her why this diet works. She has been continually questioning me about my diet, but she is afraid to try it because the doctors have convinced her that fat and red meat are going to block her arteries again and kill her. I have sent her articles, links to this thread, other websites, and all sorts of information. Tonight in exasperation,I finally pointed to her grossly extended belly and said that this is what is killing her.

Honestly, my sister has gained so much weight since the cardiologist put her on a low fat diet and all those medicines that it is just nuts. It is really hard to believe the doctors don't know what they are doing by encouraging folks to carb it up when they have serious health issues. I think I was well on my way to becoming as sickly as my sister if I hadn't found Scorpion's life changing thread on this forum!

I know my sister doesn't really believe that she could have a 24 inch waist again, but I think she sees my new joy in living and longs to wake up also feeling the same excitement for the day that I now have. I also know if she would just give this diet a month she would have all the convincing she would ever need.

If only those durn doctors didn't already have their money grubbing hooks in her! There is so much information out there proving that it is carbs and not fat that cause heart disease. I can't understand why a few doctors in USA aren't willing to look at this information and use it to help people really live well.

try this for a treat;

Peanut Butter Cream Cheese
o 1 ounce cream cheese
o 1 tablespoon sugar free peanut butter
o 1 tablespoon heavy or whipping cream
o 10 drops Liquid Sweet & Low (or artificial sweetener of your choice)
o 1/8 teaspoon ground cinnamon
Blend all ingredients in a small bowl.

Serves 1. Approximately 208 calories.

***Note: If you life this one, make up several servings at one time and stick them into the refrigerator in custard cups for individual servings. That way you only have one cleanup.

Plain whole milk yogurt is 49% fat, 29% carbs, 24% protein.

An 8oz. serving will have 11 grams of carbs, all as sugars.

On this diet, you will not waste your money on any low-fat yogurts. You will also avoid the yogurts that are loaded with "fruit".

If you are restricting carbs to about 50 grams per day, one serving uses up 20% of your carb allotment. To make it worthwhile, be sure that is has active cultures.

Indeed - the best yoghurts are the Organic Full Fat Greek Style Natural yoghurts. Yum. I use them for making things like cucumber tzaziki dips. They are wonderful with barbecued meat.

I also make a lot of variants on an Eastern European dish called variously in different places - mititei, cevapi, kebap etc. Here are some of my variants:

Mexican Style
-------------
500g pork mince
500g beef or lamb mince
1 green pepper
1 red pepper
2 shallots
1 egg
salt & pepper
Fajita spices (either fajita mix or fajita recipe)
chopped Coriander/cilantro leaves

Mix it all together till well blended and then create little balls - flatten these down to make a flat sausage shape - about 3 inches long and about an inch deep. Lightly coat with some olive oil and grill.

Very yummie with Salsa or a Yoghurt dip :)

Balkan Style
-------------

400g pork mince
400g lamb mince
400g beef mince
2 eggs
2-3 shallots
4 garlic cloves
4 tsp cumin
4 tsp paprika
2 tsp hot chilli powder
1 tsp ground coriander seeds (optional)
chopper parsley
salt and pepper

Prepare as above.

Both very nice to make in the summer for the BBQ.

You can actually mix and match herbs and spices to create whatever kind of cevapi you like best.

100g = 5g of fat, 7g of protein and only 3g of carbs.

That's about 1/2 cup. SO it fits quite easily into a low carb diet if used as a condiment/flavour enhancer.

I use it mainly for dips and in curries.

Heavy whipping cream (organic) goes great in your eggs, in your coffee, in sausage gravy (no flour needed), over sauteed brussell sprouts, spinach or kale (with butter and a bit of bacon or bacon fat), in smashed califlower with butter, chives and garlic, in soup with asparagus, leeks and some chicken stock, and mixed with chunked blue cheese and a bit of cider vinegar and black pepper for the best salad dressing you ever had.

I love this diet! If you follow the ratio's and fat fast to break any stalls, you can't help but be successful. A year and a half after starting this diet my size fours are becoming too big and I feel great unless I cheat and eat a cupcake or something stupid! But even then I have learned I can have carby treats now and then if I really want them. I don't feel deprived or worry about overdoing it or cheating for long because the joint pain and stomach bloating that comes with that little piece of cake remind me to get back to the proper ratios of fat and carbs fast!

Recently I discovered Hardee's low carb breakfast bowl! It is pretty tasty when I don't have time to make breakfast or if I run out of bacon at home. It is a big bowl of eggs, sausage, cheese and bacon that will certainly keep you full long past lunch. Another discovery...duck fat! OMG! That stuff is the bomb! Also....baba ganoush, which is like roasted eggplant hummus but so much creamier than bean hummus!

My younger sister is in town visiting. At 200 pounds, and with 3 angioplasty procedures under her ever widening belt already, she is in misery. Facing a life time sentence of blood pressure, cholesterol, IBS, and antidepressant meds, she is feeling hopeless and literally too tired to get up off the couch! She is on 8 prescriptions and her massive stomach looks at least 8 months pregnant. She should be the poster child for metabolic syndrome!

I spent much of the day trying to explain to her why this diet works. She has been continually questioning me about my diet, but she is afraid to try it because the doctors have convinced her that fat and red meat are going to block her arteries again and kill her. I have sent her articles, links to this thread, other websites, and all sorts of information. Tonight in exasperation,I finally pointed to her grossly extended belly and said that this is what is killing her.

Honestly, my sister has gained so much weight since the cardiologist put her on a low fat diet and all those medicines that it is just nuts. It is really hard to believe the doctors don't know what they are doing by encouraging folks to carb it up when they have serious health issues. I think I was well on my way to becoming as sickly as my sister if I hadn't found Scorpion's life changing thread on this forum!

I know my sister doesn't really believe that she could have a 24 inch waist again, but I think she sees my new joy in living and longs to wake up also feeling the same excitement for the day that I now have. I also know if she would just give this diet a month she would have all the convincing she would ever need.

If only those durn doctors didn't already have their money grubbing hooks in her! There is so much information out there proving that it is carbs and not fat that cause heart disease. I can't understand why a few doctors in USA aren't willing to look at this information and use it to help people really live well.

And this is the real problem. It's not as though that serving of carbs will kill you dead or have an immediate impact that smacks you in the face (well unless its just on the weight front, which often isn't enough of incentive). It is the slow, long, drawn out painful killer of bodily degeneration, medication, more degeneration, amputations, surgeries, heart bypasses, etc, etc. It takes a brave person to acknowledge that the advice they have been given has made the condition worse.

Hell, how can someone not get that they are following the advice - but they are getting fatter, they are on more medication, they have more aches and pains, they are impotent, etc, etc. Yet they will say - just think how much worse it could be if I wasn't following this healthy diet my doctors have put me on. Really?? Just how much worse can it get???

Are the blood sugars going down? Is the blood pressure going down? Is the cholesterol going down? NO! How come? After all you are taking the glucophage, the beta blockers, the statins, daily aspririn, etc and AVODING all those nasty ARTERY-CLOGGING SATURATED FATS lol Notice how it's not just saturated fats anymore, it's artery clogging saturated fats. Right!!! So how come your blood pressure and cholesterol are rising and your arteries are beginning to look like a blocked sewage pipe? Maybe?? No, my doctor knows, understands and is on my side! Right?

Dropping in again to mention that I use tortillas - pesto flavour tortillas, cheese flavour, nacho etc. to make pizza.

A good-sized tortilla contains only 30g carbs. I layer roasted vegs and swiss cheese, or pizza sauce with black olives and goat cheese or anchovies and provolone.

Bake at 400F for approx. 10 minutes.

The idea isn't new, surely, but I LOVE pizza! Thanks to tortillas I can even have 2 for dinner. (grin)
