Sounds strange I know but it was sooo...good! Kind of like a pot pie. AND she would make bird-egg pie. Little guinnea eggs mixed with spices and baked like little pies... Christ the smell in the kitchen was WONDERFUL!!!!!!!!!! I can only imagine. We went out to eat. That sounds better than what I had. Double something duck. Not so good. Do you coat your catfish in mustard before dredging in cornmeal/fish fry? My next door neighbor who works R and D for one of the largest food producers in the world gave me some catfish he had fried. Essentially he mixed hot sauce and mustard (mostly hot sauce with a little mustard) together, dipped the catfish in that, then rolled the fish in a commercial cajun catfish mix (zatarains, i think) and then fried in peanut oil. It was awesome. |
