Whatever in the wide world happened the other nite, happened. Done deal. It kinda took me by suprise too. I decided it's over(at least for me). It's snowing and sleeting here (yet again). Soooo. I fried me some nice thick bologna, put it on toasted bread with a HUGE slice of onion, and got some baked beans/mac/n/cheese on the side.

I thought I was the only person that did that.

I call them pac man sandwiches because when the middle of the bologna starts to bubble up I cut it halfway and it looks like pac man.

BTW. I bake a pie once a week, usually one of those Marie Calendar pies. Frozen yes but I'll be durn if there's enough difference to matter...By the way, I'm in NO way overweight. (6'-0'- 170'ish). It's all perspective!!!!!!!!

Oh. LOL. Now THAT makes sense. I was trying to figure the proportions to not have too much left over. I figured 1 potato, 1 egg, a half slice bologna, rice, gravy over it, with a bicuit would make at least 2 or 3 meals.

It's hard to cook for 1, isn't it? I have that problem too. Even a small batch of biscuits made 6. I had one for supper, saved one for breakfast, and froze 4.

That's a great idea making enough to take to work and have some when you get home too. Too many single people don't eat right, and end up paying for it.

I bet your recipe would be good too, if you cooked an egg over easy so the yolk spread over it, would also be good.

Just love feeding my brother in law. That man can clear a table of everything on it, in record time. Have never seen a man eat like him. It just disappears. I love watching him enjoy food. It's one of his better qualities. 8)

You make your pies like I make my bread. Every week I make bread. Nasty stuff from the store just doesn't taste right. I'd make more pies too, but my crusts never satisfy me. Once in a while it's good, but usally I find something wrong with it. Do love a good custard pie though. Or peach, or rasberry, or pecan, or......yup, I like pie.

Take the time to put a small width of aluminum foil on the edge of the pie, THEN pake according to instructions.

I do put the foil around it. Have one of those rings they sell down in Amish territory. It just fits over the top. It still never comes out the same color as the actual pie crust, and it ALLways breaks a piece off the crust when I'm cutting it. It doesn't break right on one piece, it breaks between two of them. Then it's not pretty anymore til those pieces are gone. Maybe a pie cutter would work better than a knife. lol
