I do put the foil around it. Have one of those rings they sell down in Amish territory. It just fits over the top. It still never comes out the same color as the actual pie crust, and it ALLways breaks a piece off the crust when I'm cutting it. It doesn't break right on one piece, it breaks between two of them. Then it's not pretty anymore til those pieces are gone. Maybe a pie cutter would work better than a knife.
