Fantastic idea. I've been wanting to do this anyway. I have a great big pot (not a canning pot) that I was planning to use. I heard I can put a towel in the bottom to keep the jars from knocking or buy a rack to put in there. Anyone on here ever do it that way before?

No, but I want to learn to can also. I've wanted to for awhile, I see now it is a dire thing to learn.

If anyone has some good sites or other references, let us know.

IN the meantime, I am gonna go get my mason jars before they too rise in cost!

This is all a hot water canner is. A big pot. Racks make it a helluv alot easier to get the jars out, but as long as your pot is deep enough to cover the tops of the jars thats all you need.

Sealing rings are a problem. Modern ones are good for one time only. Some people used to use parrafin wax to seal jars also.

Does anyone know where to find the sealing lids that aren't made in china? Also, I do not want the reusable plastic tattler lids as the company says not to use them for long term storage?
