Property Survey Question Regarding Boundary "Calls"

I´m trying to determine the precise boundary of my property. I am somewhat familiar with surveys/plats since I took a Real Estate Course and Real Estat Law Course years ago, but I´m missing something here. Any help is appreciated.

Here´s the situation:
From one steel post a call is given as such:

S 44Degrees 21´ 18" W

Of course, the "Degrees" is the symbol, not the word. Can someone clarify how I translate that to the actual direction from the steel post?

The other "call" in question is:

N 81Degress 31´ 10" W

I know the last numbers are minutes and seconds or arc, but having trouble with the precise direction to go from the post.
