Pork chops are damn good eatin. the problems with any birds are that they have that big hole in the middle where the guts was, that whole area can be covered in bacteria. if they grind it up, the whole mince can end up full of bacteria. a chunk of meat like a solid beef roast can have bacteria on the outside, but it won't have bacteria inside (if the beast was properly raised, slaughtered, and inspected). cutting a chunk of meat into steaks (or chops) means the surfaces of each steak can have bacteria on it, but the bacteria will be killed when you cook it grinding up any meat means that the whole ground meat can have bacteria all through it, so it must be stored properly before cooking and cooked properly all the way through. this also applies to sausages because they are ground meat. this is especially bad with poultry because they have the big hole in the middle full of bacteria if you marinate meat, you must either discard the marinade or else cook all the marinade the same as the meat. using uncooked or partially cooked marinade as sauce or for basting can mean putting a coating of bacteria all over the cooked meat, leading to food poisoning. a roast which is rolled means that bacteria can be inside as well as outside, so it has to be cooked all the way through. this applies no matter what kind of meat it is. |

My husband works for one(truck driver),they have a freezer and cooler in those trailers and if a driver fucks off and doesnt keep foods at the right temp and allows foods ta de-frost somewhat and then re-freeze them before delivery... BAD,VERY BAD! But most trucking COs have ta have a tattletail within crates/pallets esp. any seafood/beef/pork that records the temp for the whole trip and the load can be refused based on readings. one person was just fired at the same co my hubby works for because this person allowed $30,000 worth of seafood to go bad. Hubby said after he started working frozen foods he had no idea how dangerous it was(folks leaving)pallets of foods just sitting on the loading docks that should be in a cooler or freezer. Just another line along the food-chain to your table i thought you guys should have a heads-up on. |
