Personally, I love them. I'm eating some right now.

If you like ramps (also called wild leeks and ramsons), don't hesitate to share a favorite recipe!

Personally, I love ramps with anything but on pizza is my favorite. But even plain raw ramps are damn good.

I'm lucky to live in WV where ramps are easy to find in the woods and are considered the "king of foods". We have big Ramp Festivals here in several towns. Gotta love that.

They are wild leeks. They have two broad leaves that taper down to a single purple stalk and a bright white bulb.

The leaves, stalks and bulbs each have their own flavor.

The overall taste is like onions and garlic mixed with a little bit of woodsiness thrown in.

I'm sure that very few Australians have ever eaten them.

They have a very short season and only grow in the eastern USA. They are considered a delicacy.

They're not onions but are related. The flavor is quite different. You can use them in lieu of onions in some recipes but your dinner guests will be able to tell they're ramps and not onions.

Around here (WV), there are many roadside sellers peddling ramps. You can usually get around fifty in a bag for $3 or less.

I don't know where you live but keep an eye out for roadside sellers.

They're also easy to find at fleamarkets.
