When they are really young greens, eat them raw in a salad. Otherwise yeh they are really tasty but I prefer them steamed to boiled. Supposedly you can roast the root and grind it to make a coffee substitute, never tried that though. Did make dandelion wine once, which is what you use the yellow flower heads for. It wasn't bad either. I don't see why folks think of them as weeds. If spinach was growing in your front yard would you call that a weed too? It's about the same thing. |
