Don't be sorry for the rant Sim. You have every right. We talked about this a few times before. And I would be fed up as well. Also for you, as for MoN and CS, don't sell yourself short. You do that. I know why, because it is in your character to accept what is happening at your job, call it loyalty beyond limits and next to that you are probably worried about finding a new job without a college degree or whatever, but it is totally unnecessary. You are an asset. One that brings the company turnover and profit.
The effect of it is that they keep you underpaid and enslaved till you end up totally overworked and burned out at age 36 and then they will just dispose of you. And not only that, they even blackmail you by saying you won't find any other job in the field that you excel in when you would quit. They know which buttons to push Sim. But they don't own you girl, even though they currently believe they do.
Let me tell you this. I am heading a department over here. We do scheduling and ordermanagement. Over the years we have had trainees that were college and university degree. Really high profile based on their papers and diplomas. But in the end they either lacked the creativity or work ethics or they were gone again after a year. No commitment whatsoever. It brought the company little to nothing and you still had to pay big salaries.
Since then I have said the same. Fuck those high profile demands in my job openings. I need people that know what it is to work hard when it is needed, how to be part of a team and have the creativity through logical thinking, not because they learned it from books. With all due respect to those who went to college and university, but also in production, nowadays we ask technical operators to be schooled on a way to high level, where all you need is people who have it in their fingers, who can operate a machine blind, because they know how to handle it from logic, talent, hearing specific sounds. Pay those the right salary and as a company you can not find better workforce than them, in both motivation and loyalty.
I told you, you are a multi-talent. There are many bordering areas to your current field in which you would really fit and stand out from experience, organizing talent, work ethics. You hold a much better hand than you often think. Both towards your current management and outside. But you really need to be the one to take the initiative and set demands.
So, be confident, speak your mind, stay respectful but firm in doing that and no one can dispute your honesty. Do not compare yourself to others, or talk bad about them. Even though (and this also goes for MoN, CS or who ever) you probably are right, the "he does this, she does that" discussion only distracts and takes away the strength of your own position. Go from your own force and skills and make demands. And if your colleagues come up in the discussion, make use of that. Put your management to a choice from your own perspective: Either listen and get an offer or you will find a new challenge.
To be honest, I truly believe your working days there are done and a new challenge is much more likely to be the outcome. And you know it too. Your salary might get increased some if you put your foot down, but they for sure will not lighten your workload and that is a major factor in your current state of mind. So you have to get active in finding another job. From a working position. I know you have a lot on your plate as it is, at home and at work, but if you don't put yourself to act, this will not end well health wise Sim. And you are WAY to young to end up in that situation.
Anyway, there is always the dilemma about quitting your job or getting fired. Below is a link to an excellent site, where you can find a lot of handles and tools to help you make the right choices in this:

Just explore it when you have time and feel like it. Same goes for MoN, CS and others. You are all way better then you often think. It is all about confidence, work ethics and proof of skills. Tell me, show me. If you are able to do that, bosses would be crazy to not try and keep you satisfied, because you are the best assets they can get in making their own jobs easier as well. So play your cards right. You have a much better hand than you often think.
