Oh I would LOVE the mashed potato version!

I think this is the recipe I used below. Or I at least based it off this since I saved it to my computer. I tend to adjust recipes to my liking and/or to make them a bit healthier if I can. For example, this recipe calls for TWO sticks of butter (Pioneer Woman recipes tend to be generous with butter, cream, etc). I probably used less potatoes than the recipe called for but regardless, I would never add that much butter. I'm incapable and would feel guilty eating the potatoes, lol. And I typically use low fat sour cream (not non-fat, that's nasty). I do use regular fat cheese, because lower fat cheese is weird and doesn't melt right.
