Try this. It's hearty and feeds a lot for cheap. It's better in the Fall or Winter though. I don't know what it's called. You can adjust it to feed 7. Mom always called it hamburger soup. You can also do it all in one big pot.

Hamburger, cabbage, garlic, carrots, onion, V8 Juice.

Brown the hamburger with lots of pepper, drain. Then toss the diced onion, sliced carrots and garlic in, cook a few minutes. Pour in the V8 Juice and bring it to a simmer. Then add the cubed up cabbage and simmer about 20 minutes. for 7 kids, I'd get a small head of green and red cabbage. You sorta have to use green or red cabbage. If you use Napa or Savoy cabbage, it just sorta simmers away to nothing. I guess they are too delicate.

Another cheap and easy big dinner. It's not healthy at all though. I call it Homemade Ghetto Chicken Enchiladas.

Big box of frozen chicken soft tacos
Can of enchilada sauce
Can of olives. You can buy sliced, but it's cheaper to buy a can of whole and slice 'em.
Can of diced green chilies
Lots of shredded cheddar

Layer it all in a big casserole dish and bake at 350 for 45 minutes. I even made an step by step album some time ago.

Thanks for the recipes Deano. I'll try them out. But the kiddos flew the coupe a long time ago. The only time I cook for all of us anymore is holidays. Just got used to eating what I've been cooking for so many years..lol. I spent 34 years raising kids. Kind of enjoying the peace and quiet. It's nice to just fry an egg and make 1 piece of toast although it took me a few years to get used to not making so much!
