Something you will need this summer...my baby back ribs (done in oven) This gets RAVES and requests...
time consuming, but you can do the day before the festivities..
BABY BACK RIBS
Ingredients
• • 2 3-pound packages baby back ribs (about 6 pounds altogether)
• • 1 cup honey
• • 1 teaspoon paprika
• • 1 teaspoon chili powder
• • 1/2 teaspoon garlic powder
• • 2 tablespoons Old Bay Seasoning
• • 1/2 teaspoon onion powder
• • 1/4 teaspoon celery salt
• • 1/2 cup DARK brown sugar, NOT PACKED
• • 1/4 teaspoon fresh ground pepper
• • 1 medium onions, grated or finely chopped
• • 12 ounces barbecue sauce, any “ORIGINAL” flavor
• (I use Head Country,,,,buy online but any will do)
Instructions
Mix the sauce ingredients together in bowl,,,you can do this the day before...in fact you can make the ribs the day before.....
If necessary, remove the silver-skin on back of ribs. (butchers may do this prior)
Trim the larger pieces of fat off. (note: the fat cooks off and is separated out after ribs are done,,,use a fat separator AFTER STRAINING OUT THE BITS)
Cut ribs apart into 2-rib sections.
Put pieces to start bone side up in large turkey roasting pan.
Pour the sauce over and coat all the pieces in the sauce.
Cover lightly with foil.
Bake at 325 degrees for 1 hour,then turn pieces over.
Bake another hour, covered, then turn pieces over
Reduce heat to 275 and bake another 1 hour, covered. turn over again.
Reduce heat to 250 and UNCOVER, bake another hour
Remove ribs to platter. Strain remaining liquid to remove bits, then strain through fat separator. (OR, STORE JUICES WITH BITS IN FRIG OVERNIGHT AND REMOVE FAT THE NEXT DAY)
Re-heat ribs in large fry pan with sauce,,,serve with some sauce over servings. Serve extra sauce on side for dipping.
