BigD, congrats on the whopper turkey! You guys post the best videos and human interest stories. Thank you for such great contributions.

I’m making Turkey roulade this year. Butterfly a turkey breast and stuff it with the rest of the thanksgiving diner!

That sounds like a great idea!

I’m going to put Either bacon or breakfast sausage, stuffing, and cranberries in it. Need something to bind it, probably eggs.
 Quoting: Isis One

Mashed potatoes?
 Quoting: Simple27

They’ll be a side but I think you need something liquidy to hold it all together. I’ll read couple recipes.

Hope it turns out well Isis! We actually ordered a dry rubbed, smoked turkey breast from a really good BBQ place here. It's just going to be 2 of us and we decided to cut back on the work this year by ordering the meat and just making the sides.
 Quoting: KickinIt

That sounds perfect KickinIt. I’m going to keep that in mind for next year. I was happy to find something different. What sides are ya makin?
 Quoting: Isis One

Traditional sides - stuffing, mashed potatoes/gravy, fresh cranberries, green bean casserole and Thanksgiving slaw. I decided to make a different dessert this year that's easy to scale back, since it's just 2 of us. I'm making individual pumpkin cheesecakes w/gingersnap crust using muffin tins.

Here's the slaw recipe in case you or anyone else is interested. I think I shared this here last year. It was a new item last Thanksgiving and everyone loved it. It's yummy, and the cold/crisp aspect was a nice addition.

Sounds good, thanks for recipe. Where did you get the cheesecake recipe?

I saw two good ideas for sides on marion’s kitchen on Instagram.

1) Peel sweet potatoes, cube, set aside. Melt stick of butter til bubbling, like brown butter. Add sweet chili sauce (can find in Asian food section) pour over and coat sweet potato cubes, cover with foil bake 30 minutes, at 350. Remove foil, cook another 20-30 minutes. Garnish with spring onion, or green onion.

2) Sauté some bacon set aside. Cut Brussels sprouts in half, place in pan with rendered bacon fat, brown them really well. Pour water in, cover, steam for 15 minutes. Remove from pan, place in bowl, coat with sweet chili sauce. Add bacon back in can add almond slivers optional.

I like these cause it takes the usual suspects up a big notch.

Yes, you have to tie with string once you roll it but I think you need something to keep the sausage, dressing and cranberries together for the stuffing that goes inside the roulade.

Edit: just watched Ina Gardner’s turkey roulade recipe. She actually made a dressing with cranberries and figs reconstituted with apple brandy, sauté onions and celery, toasted some pine nuts, chopped fresh fresh Rosemary threw it all in a bowl with three cups store bought bread crumbs 1 1/2 cup chicken broth an egg, mixed it and stuffed the turkey with that so I think I got it now, lol.

I’m drooling just typing about it. I may never cook a regular turkey again because like Ina said by the time the dark meat is done, the white meat is bone dry!

Those sides sound great! I'm not a big sweet potato fan, but the words "brown butter" and "sweet chili sauce" sucked me in. The Brussels also sound fantastic with the addition of the chili sauce. I say go for it!

Here's the cheesecake recipe. Although in the pic they look tiny, the recipe is to be used with regular size muffin tins, although I'm sure minis could be substituted. I'm going to half the recipe, and that will give each of us a couple extras. The rest I'm dropping off to a friend on Thanksgiving Day for his dessert.

Hi Isis. The split breast is a great idea. Here at my home it will be just husband and I.

The holidays are upon us already.

I'll be glad when 2020 ends. LOL. Things are looking much better for the coming year.
