No, I'm not vegan or vegetarian. There was a follow up to that verse.
Genesis 9:3
Everything that lives and moves about will be food for you. Just as I gave you the green plants, I now give you everything.

Of course, people making up stuff as they went are how even the ancient texts got written in the first place but you flatter yourself to think you can improve upon it.
