I would start restricting his food access - give him smaller portions, try to control how fast he's eating.
Either way, like other posters have suggested, you may want to take him in to the vet and have some bloodwork done at the very least. He could be diabetic or a host of other problems.
If that doesn't figure things out, you may be looking at some more expensive testing/scans to see if he's got something going on anatomically.
Poor dude.
As an animal lover, I know how frustrating it can be when they get sick - they can't tell you what's wrong or different. It makes diagnosis a bitch sometimes.
