I like steak well done. I ordered a steak and specified that I wanted it cooked completely. When the food arrived, my steak was so under cooked that I didn't even have to cut into it to notice.

I felt bad asking the waiter to take it back because he seemed overwhelmed with the dinner crowd.

He knew that I felt bad, and he took it back and had the chef put it back on the grill until it was cooked correctly.

He must have told the chef that I felt bad, because he came out and brought the steak to me personally.

He told me that, as a chef, he would rather have a person send food back that isn't properly cooked then have them just eat it anyway, because he wants to make sure that he and his staff are offering the most excellent and accurate service. He was really nice.

I always worry about the spit thing, I guess you have to gauge the overall atmosphere of the place. And if you do return food, do it very nicely.

Steak well done? You ought to be ashamed of yourself. Chef's pride themselves on being able to cook a steak to 'perfection' meaning rare. Asking for a steak well done is the highest form of insult. I would have thrown you out Gordon Ramsay style if I was your chef. Order a burger if you want something well done next time.angryface

Things that came to my mind

Ambiance
How are you greeted/ seated
The sounds
The lighting
The smell of the restaurant.
The table and chairs, are they comfy
How is the waiter
How is the menu, fitting with the season
Is it possible for the kitchen to adapt if one of your guests has almost impossible problems
How is the tablecloth tableware candles and such
Am I being served from the right side
Can I get a waiter at my table at the exact right moment.
How is the food arranged
Does it taste good
Is the food and taste surprising in a good way
How is the wine menu
Does it have reasonable prices.

I am always surprised when I look at the American restaurant culture.

Most of it is fast food or elevated fast food, like olive garden. yes I looked at the menu.
For truck drivers and travelling salesman.

There are a lot of independent places, you just won't hear of them because they are small. I rarely eat at any of the chain restaurants. When we eat out, most of the time its at a small Vietnamese place. Its pretty good, and cheap.

Being that I once had to bust my ass for every tip and getting $2.01 an hour I AM one of those people who expect my table to be " prebussed", and have my food checked on 3 min after its been delivered to the table, and I expect refills, ect, in return I have no problem leaving a great tip for them. I've only ever sent food back 2 or maybe 3 times in my life and that was for being cold and undercooked, but I was never unkind or mean about it. No need for all that nonsense. ..but as a server you get some REAL ASSHOLES and you know how you deal with a beligerant asshole???

thank you. done a shit ton of restaurant work at a lot of different places in my life too, and never once actually saw anyone spit in or do anything with the food like that before bringing it to a customer.

wouldn't work at a place that had people that would do that, either, if it ever happened. But it was just something that never came up.

and do I return things? Yes, if not done right, but I TREAT THE SERVERS AND STAFF LIKE HUMAN BEINGS.

I worked as a line cook and no one ever spit in anyones food while I was watching although we did joke about doing it a few times to people who sent things back that were fine. (for example someone asked for a steak rare then sent it back because they decided they wanted well done after they tried it rare.)
