Nice to hear from you all too. I am canning berries these days.

Yendor - I see fresh salsa in your future.

Knothead - It was hard to find a pressure canner but I did. I have been canning chicken, bones and all. My dog has chronic issues and can't tolerate dog food or many forms of protein and the bones once canned are very soft and an excellent source of calcium and phosphorus - he loves it. Youtube is my friend as well.

Someone gave me 2 gallons of milk and I canned them to make condensed milk for sauces and such. I didn't know that was possible.

Northlights - yummy berries! I have a bunch of black raspberries along the woods - perhaps I will try that if I don't eat them all!

Have fun everyone! XO

It seems we're all being very industrious. Yay for us!

Suzanne, I'm finding it harder to get my hands on canning equipment and supplies than usual. My old hot water bath canner sprung a leak, and I'm looking for a new one...no local stores have any right now...they're on back order. Meanwhile, I'm making do water bathing with a stock pot and my pressure canner pot...but they're not deep enough to handle quart jars.

My dad used to can chicken for his dogs...he said the same thing, that they could eat the bones and it was better for them than canned dog food. I've never canned chicken on the bone, but my sister does all the time. Right now my freezer is full of pork roasts I found on sale that I need to thaw, cube and can. It's also full of chicken bones (which we save up) so I need to make a huge batch of bone broth and can it.

Northlights, I wish I had a supply of berries to can. We have a strawberry patch but my grandson eats them so fast there aren't any left over to preserve! Berries are hard to resist.

Happy canning and preserving, everyone! Sounds like we're going to have well stocked pantries this winter.

KH
