What are U having for dinner tonight?
Bought or homemade?
I'm making homemade chicken fingers, smashed potatoes and a tossed wild green/romaine mix salad with olive oil, vinegar & dill dressing. Grape juice for beverage.

Porky-Pine balls over salad.

Porky-Pine balls: rice soaked in milk, mixed with ground beef, onions, and baking powder, rolled into balls and covered with tomato soup. Bake at 350 for 45 min. Top with tomato sauce and serve with a salad.

Cheat night, I cooked up a bunch of Bacon hamburger, fresh sliced Green peppers, onions, and mushrooms. Made up a quick sauce with the normal spices and used some pasta.
My pasta maker comes in later this week, and I've some thigh and leg bones simmering in the extra large crockpot for broth for soup tomorrow. We did a few nights of bone in chicken in a row with hot sauce fresh veggies, homemade ranch dip and rice or potatoes lately.
I made mayo from scratch today, actually pretty easy, we were having tuna for lunch and had ran out.
So not completely from scratch but this was one of our cheat nights, The hubby is working so I go with easier meals.

I made oven baked, Barbeque chicken drumsticks. We had fresh garden tomatoes, with fresh picked basil, sliced garlic and mozzarella, and (leftover sweet Italian sausage and peppers from last night) with Garlic Bread. I used double stacked granite ware 3 quart pots in my solar sun oven.

In the top one I put a seasoned and garlic stuffed chuck roast with Irish potatoes, celery and onions. In the bottom one I put a seasoned and garlic stuffed eye of round roast with celery, onions and fresh chopped carrots.

All was cooked around 6 hours in the sun oven because it was a hazy day (the sun oven only got to right around 200 - 215 degrees). After 6 hours, the temperature started dropping so I had to finish it off inside in the gas oven for a little over an hour.

The end product was so tasty and tender. All was served over jasmine rice.
