I have 8 people to feed tonight, so I'm at a loss. I'm going to bake an oven full of pork ribs, but have no idea what to make with it. Getting kinda sick of mashed potatoes.

Dollar Tree has these delicious $1 Jamaican jerk patties.

I just finished prepping a nice yankee pot roast with carrots, little potatoes, mushrooms, zucchini, garlic and sweet onions in a merlot wine sauce with various seasonings including Worcestershire, soy and bouillon. Total cost approximately 15 bucks.

Mashed Carrots! With bacon bits or caramelized onion bits spices ext... or just carrots in a sweet honey butter... or carrots and sweet peas... together or separate both mashed... or not... lol...

so many things to do with veg...

oh also... beets. not mashed... cut like home fries and baked in olive oil and spices. or cut in thick slices...

just... beets are a bit messy to work with...

if you can find them.. get those little BLUE potatoes which are dark blue almost purpose INSIDE as to the color of flesh.. wonderful in taste.. darker than blueberries but don't taste like blueberries... I like them just boiled with butter on them in a jar in the frig for small snacks too.

same company that grows these grows red with flesh the color of ham and yellow with yellow flesh.. all really good.

Oh that sounds awesome. I thought about roasting potatoes, but I don't think I have enough sheet pans, so I went with buttered potatoes. I think I might make some sweet biscuits too.

with beets or yams too.. baked "fries" of veggies are to die for. even potatoes done this way instead of deep fried.

Oh, I haven't made honey glazed carrots in forever! That's going in my meal list next week. I'm the only one in my family who likes beets....I must have gotten if from my Grandmother, lol.
