I just had leftover casserole and a salad. The casserole was even better today. This one was made with black beans, jasmine rice, Wisconsin cheddar, broccoli, cauliflower, and bread crumbs. I'm grateful to be eating, but it always makes me feel spoiled when I have something extravagant like that. Many around the world won't be getting dinner tonight.
