Moses was resurrected by Christ, who is the Resurrection, even before Jesus Himself was resurrected; he is now in Heaven, and represents those who have died in Christ and sleep in the grave, who will be resurrected and given a new body.

Elijah never saw death and is in Heaven, representing those who are alive in Christ at the time of His Second Coming, and will never taste death.

You are right the soul is not immortal. Those that rebel at the final judgement will go into the lake of fire and they will be consumed and destroyed. This is known as the second death....death for all eternity and will last forever.
