Never fill the inside/stuffing to much as this also dries it out, also a lemon inside help it stay moist. Make some seasoned butter and form it into a ball, slide your fingers/hand gently under the skin, you have to work it loose, and put the ball of butter in there, then smash it down and spread it around.
