Do you have a favorite ramp recipe? Do they go better with beef, pork or chicken?

I don't eat pork but beef and chicken are great with ramps. Here's the ultimate:

Take a freshly-caught brook trout, gut him, rinse him. Stuff him with ramps, salt, black pepper, some lemon zest and a pat of butter. Bake at 350F until the skin can lift off easily. Drizzle with fresh lemon juice. ENJOY! Best served with a Niagara wine and asparagus.

They are skinny from green onions (scallions) family with a garlicky taste - and only are good in early spring

Greatest early spring vegetable green

Fry up in butter - goes with anything as a side

"These ramps are weak"

They are not skinny here. The leaves can be 2 inches wide and the bulbs can be up to an inch in diameter. Many people prefer them when they're young for eating raw (because they are very tender) but I prefer them when they're tall and wide (with a huge bulb) because I cook with them. Ramp season is just under a month long. After that, they disappear until next spring.

West Virginia is the Best Virginia. We work hard, we play hard and *sometimes* we fuck our cousins. Gotta love it!

Some people probably would call my ramps weak. The ones on my property are fairly mild compared to the Randolph County variety. But that makes them perfect for a raw garnish, a wilted salad green or a sandwich topping.

Another great ramp recipe:

Take extra virgin Olive oil and dehydrated sliced ramp bulbs and stems (the leaves will color the final product green). Heat the olive oil in a sauce pan. Use the "warm" setting on your stove. Add the ramps. Allow to warm for 30 minutes to an hour. Strain the ramps out of the oil. Now you have ramp oil that you can use in salad dressings, dips, toppings, pasta, etc.

How do I go about getting some?

Where you live, you'll have to pay a fortune for them. I'm not trying to rub that in--I'm just being honest. They are in limited supply and the closest ones are growing about 1500 miles away. Some high-end restaurants will have them, though. Now is the season.

Then again, I can send you some to try. But it won't be cheap. I have to pack them in dry ice. To get the dry ice, I have to travel 2 counties away. Then, I have to ship them next day air. That's going to be expensive. Is it worth it? Yeah, if it's the only chance you have to try them. They're great. But the shipping and gas is approaching $100...

Awesome cream soup...sauté ramps in olive oil. Stir in some stock.
Throw the mess in the blender.
I'm going to try roasting some this year.
