Stuff him with ramps, salt, black pepper, some lemon zest and a pat of butter. Bake at 350F until the skin can lift off easily. Drizzle with fresh lemon juice. ENJOY! Best served with a Niagara wine and asparagus. |

The leaves can be 2 inches wide and the bulbs can be up to an inch in diameter. Many people prefer them when they're young for eating raw (because they are very tender) but I prefer them when they're tall and wide (with a huge bulb) because I cook with them. Ramp season is just under a month long. After that, they disappear until next spring. |

Heat the olive oil in a sauce pan. Use the "warm" setting on your stove. Add the ramps. Allow to warm for 30 minutes to an hour. Strain the ramps out of the oil. Now you have ramp oil that you can use in salad dressings, dips, toppings, pasta, etc. |

I'm not trying to rub that in--I'm just being honest. They are in limited supply and the closest ones are growing about 1500 miles away. Some high-end restaurants will have them, though. Now is the season. |
