If you are using high temps, you are not barbecuing, you are grilling. Barbecue is a low temp process that makes cheap cuts tender, and tasty. A rack of pork ribs can be grilled in about a half hour, but they wont be edible. Give them 4 or 5 hours at a very low temp, and it will be the best meal you ever had.
