I thought you handled all raw meat as if it had ecoli or salmonella.

You prepared the surfaces, you dont cross contaminate. you wash your hands and sanitize and clean the prep station. Then you cook to the proper temperature. How hard is it?

You can get some store bought ones cooked and when you slice into them they are raw next to the bone and bleeding.
More so when rotisserie prepared.
I stopped buying store cooked poultry over that.
You have to be careful with the bones before cooking as well. If you get nicked or punctured by a bone in prep before cooking, you can get problems from that in a cafeteria or at home.
