Wow. I’m impressed! Talk to me about technique...How do you get the chicken battered and fried so perfectly?

I Googled several recipes, Lance posted one a few pages back. Usually when I look up how to cook something, anything really, I read multiple recipes and pick and choose what I believe to be the best info from them. It's what I did with the Geese a coworker hunted near my home five weeks ago, I read about twenty recipes and devised my own from them.

: LouisGeese:

In the case of General Tso and the chicken, I learned to not put a copper-bottom heavy pan into the oven with oil and the chicken, add the sauce, cook it again (a reduction), then run it in the self-clean cycle as it destroyed the pan. I lacked rice wine to add to it and I can remember the taste was a teeny bit off--it lacked a sourness the rice wine gave it beneath the dried red chili peppers.

I've not made it since then. It kinda got the Mrs. angry at me.

You battered then fried the chicken in the oven?

Cooked first in butter so it wasn't raw as I thought it needed cooked beneath [before applying] the batter, then coated with the batter which is mostly cornstarch, eggs, soy sauce and sugar, added oil then re-ovened.

I over-complicated it and destroyed the pan.

What I need is one of those huge woks over an open gas flame as I could prepare stir-fry and other goodies with it.
