Storing ground flour is almost impossible, it goes rancid so quickly (less than a month). Whole wheat can be stored in a 5 gallon bucket for years if it is nitrogen packed and sealed. To use the wheat, it can be soaked in water, then "ground" easily in a blender for bread, pancake, cracker making. This system obviates the need for yeast when you get the hang of it.
