If you've been following the news about food shortages and high prices just around the corner, you are wisely stocking food, including beans and rice.
I am doing the same, because beans and rice are cheap, though they won't be for long, and healthy, as well. I just can't stand beans.
So, please tell me your tricks, secrets, hints to make beans and rice actually enjoyable, instead of just a way not to starve.
Quoting: Pooka Hey,
I absolutely
love black beans and rice.
I've been eating them 3 days a week since I was a teenager. For 14 years, about. I literally never get tired of them. My mom thinks it's funny.
I'll tell you exactly what I do.
-Black beans (1 1/2 cups 8 hours in a crock pot all day)
-White rice (1 cup in a nice rice cooker - makes a
big difference for flavor, seals it in)
-This makes 3 meals for me.
Each meal:
-Mix in a big bowl
-Microwave covered for 2:20 (covering rehydrates the rice).
-A dollup of olive oil (but don't make it goopy)
-1/2 a tomato, diced
-Two hands full of corn chips, crushed
-
Huge amount of salt (but not too much, then it's gross...but salt is seriously the trick)
-Sometimes I add a dash of Vege-Sal, yeast-extract based seasoning (contains
naturally occurring glutamates...related to msg) - but this really isn't needed.
-Mix and fluff
If you are doing physical work and sweating, the salt is no big deal IMO. Dietary requirement is like 1 tsp anyway, if my memory serves. (The amount couldn't be more than that)
