Plain beans are a disaster.

The trick is to soak them overnight, like grandma used to do, or use my modern method.

Put them in a pressure cooker (1-2 cup pinto beans to 3-4 cups water) and bring them barely up to pressure. Drain the water and rinse them well. Do this 3x. It removes the chemicals that will make you gassy, give you indigestion, and that make beans taste like crap.

Now, you are going to really cook them. Same ratio of water (add a teaspoon of salt), and bring the pressure cooker up to steam with the weight barely rocking (turn down the heat!) for about 45 minutes.

Drain them of the water, and add a good amount of butter... real butter not margarine... like 1/4 to 1/2 cup.
Now cook and stir them rapidly over a medium heat and mash them into refried beans.
These are the real thing... and they are called refritos.

Now take your 1 cup of rice, fry it in a skillet in olive oil till brown. Add about a half cup of chopped onion and a half cup of jalapeno' peppers, also chopped. Canned or fresh, either will do. Saute for a few minutes till onion is browned a bit,
Now add a small can of stewed tomatoes, a teaspoon of salt, two teaspoons of chili powder, and 1/2 teaspoon garlic powder. Stir well, and then add 2 cups water. Bring back to a boil, and cover tightly. Turn off the heat. Do not take off the lid. Steam for 15 minutes (no heat), remove lid and stir with a fork to fluff the rice. Put the lid back on for 5 minutes, and then the rice is perfectly done.

I like long grained Jasmine rice the best in this recipe.

There you go... my favorite meatless dinner for a lazy Sunday evening... refritos and Spanish rice. Costs about $2 bucks, and makes many servings,

By the way the leftovers get better the next day, and can be served with fried corn tortillas.

I was brought up in the Mojave desert, and this is how my Guatemalan auntie, and all the real Mexicans I knew fixed beans and rice. Fed many a hungry horde for almost zero pesos, and man they are delishimoso!!

Ginger and lime for black beans ( add chives changes the taste again )


Balsamic with stevia and chillie powder for red or aduki beans

I am doing the same, because beans and rice are cheap, though they won't be for long, and healthy, as well. I just can't stand beans.

So, please tell me your tricks, secrets, hints to make beans and rice actually enjoyable, instead of just a way not to starve.

You have to cook beans and legumes fresh and double soak the beans for them to really taste gourmet level. Depending on what you're making and how you want it to taste, you use purified water or broth or flavored blends. For black beans you can do a spring water first soak then a chicken broth second soak and they will taste fantastic. Add a clove of garlic to the soak and leave overnight if you like garlic.

It's all about the way food is prepared and the quality of the ingredients.

Beans out of a can would not even be possible for me I couldn't eat it. Over cooked Mexican bean slop is the worst. It has to be done right.

First choice is obviously meat of some kind, but in a shortage situation, it might not be readily available.

You also need to learn how to smoke/salt meat to preserve it without refrigeration/electricity. I have about 1/4 of a hog left in a small smoke house made of plywood (4' x 4') that I've been eating on for 3 months now. The flavor just keeps getting better and no, it isn't rotting, It mellows. About once a week I'll cut off a week's worth, rub where it was cut with a mix of salt and sugar, then cold smoke for two days again to reseal the cut. Flys and bugs won't even get on the meat and it stays preserved. You can look up how to build a small smoke house and try it with a small ham in case you're worried about it going bad or you doing it wrong the first time.
You can also look up country cured Virginia hams, they get best tasting after 6 months of hanging up.

-Sometimes I add a dash of Vege-Sal, yeast-extract based seasoning (contains naturally occurring glutamates...related to msg) - but this really isn't needed.
-Mix and fluff

If you are doing physical work and sweating, the salt is no big deal IMO. Dietary requirement is like 1 tsp anyway, if my memory serves. (The amount couldn't be more than that)

I like cheese on them. But refried beans are particularly good - use bacon if you eat it, add spices to it. They're very flexible foods.

Sooo delicious. I look forward to my 3 days of BB&R every week.

Best beverage for it is homemade lemonade with honey, and smash frozen strawberries & blueberries as ice cubes, so good - against the salty meal flavor.

Lentils, mung beans, split peas - all these you can add lots of water and cook into a soup. The secret to 'good taste' is adding tomato paste! (Plus salt and herbs etc. - and any veggies you can find.)

PS. Remember to soak the lentils first.

100% true.

You don't actually need the specialties (olive oil, diced tomatoes, crushed chips...) that I add nowadays.

I used to eat just straight beans, rice and salt.

IME, it needs more salt than you might think is 'reasonable'. That's the secret, imo.

The secret to making Beans & Rice palatable is a good sauce.

A lot of folks here have already mentioned their choice of sauce.

Just about any sauce will work depending on your personal taste.

Teriyaki, Alfredo, Tomato, Curry, Soy, Fish, etc...etc...

I have had more than 1 episode of Bean & Rice emphasis during periods of personal difficulty.

I tried a lot of sauces, including salad dressings from the food-bank, mayonnaise, ketchup etc...

Again, it depends on your personal taste, and how hungry you are.

Some food items can be hazardous to some people.

Beans is one of these for some people.

Beans allegedly contain a molecule that can cause micro-perforations in a persons lower intestine.

This can result in gut-leakage into the abdominal cavity, poor health, sickness, or death.

Just something I read somewhere.

Certain beans need to be soaked in salt water overnight; even if you pressure cook them; it helps deactivate the enzymes that give you gas.


PRESSURE COOKER. An electric one AND one for a heat stove or fire.


Otherwise if the SHTF prepare to use 6 hrs of wood to cook those hard beans like pinto.

Sazon with achoite (orange packets), the green "complete seasoning" in the container, half a cube of chicken bouillon, some complete adobo (red cap one), and alittle tomato sauce. If you have some culantro leaves throw a small one in. Its amazing. I also throw some cut up potatoes in there too :)

1 can beans 1can mushrooms sauteed onions and garlic half small can of tomato paste packet of sazon cup of water and lots of black pepper..

Another way to think of it is adding "body" to other foods.

Such as add rice (or beans) to any soup or stew. Not much...just enough to add a little bulk to the meal. The best way to do that is add rice or beans that are already cooked...so you don't over-do it.

For long term storage, I put the grains in a plastic bottle and add a piece of dry ice, the dry ice ejects the oxygen. In this way the grain lasts forever. I have bottles here since 2010, they are all perfect. I have beans, rice, corn, and others. I do the same with popcorn and the popcorn is perfect, like fresh grains. Have lots of corn, so you can have chickens and eggs.
