It would depend a lot on the acoustic qualities of the building. High ceilings with pillars will reduce the noise intensity (db) as well aisles and aisles of shelves and merchandise as in a Walmart- they are intentionally designed for noise reduction I'm sure. And you have to consider the type and quality of the microphone doing the recording too, some are directional, some noise cancelling in particular ranges and some not. Probably not as definite an answer as you would like but it really is an individual case situation.
