I think your calculations might be a bit off due to Starship not departing from LEO. I think the design is that it will depart from an elliptical orbit, with that ellipse aligned with the planned hyperbolic trajectory away from earth. They showed this directly with their earth-moon mission design and though they didn't show it explicitly with the Mars mission design Elon did reference the previous moon mission design and say that it would be the same.
