Hellmans/Best foods is the best but HEB store brand is quite good. Kraft is ok. Heinz is way too vinegary. I tried Dukes but didn't like it.

Rush went on a rant how the helmans jar says it uses "cage free eggs".

He was asking...does the egg know it was never in a cage? Does that make the mayo taste better?

Mayonnaise is sammich glue.

1 large egg
1 juice of one lemon, about 4 tsp - OR white wine vinegar
1 teaspoon mustard powder
1/4 tsp sea salt
1/4 tsp ground white pepper
1/4 tsp cayenne pepper
2 tbs bacon grease
1 cup olive oil

Dissolve salt in the lemon juice or vinegar. Melt the bacon grease.

Add a 1/4 cup olive oil into blender on lowest setting. Add all other ingredients except oil.
Slowly add the remaining oil in as it blends until the consistency is right.
Refrigerate to tighten it up.
If it is a little wet, add very small amount of flour or corn starch and whip again.

Helman's is now really awful I don't know what happened. But now I use the cheap generic value brand.

and if I was making it.. the eggs would be organic AND totally pasture raised and believe me the CHICKENS KNOW. And the taste and every is so much better. Free range is not pastured.
