Real DOOM ! Grocery Stores in Louisiana unable to get candied cherries & candied pineapple. No FRUITCAKE for YOU

On Noes! We will have to candy our own cherries! Seriously though, we had it at our stores last I checked. If you're going through withdrawal, let me know and I'll see if it's still there and mail you some.

I'm feeling generous today so will share a recipe that will convert any fruit cake hater into a lover. I use only candied cherries, and bake in bread pans. Makes it easy to distribute the liquid you keep it soaked with, and easy to slice. It's a great recipe:

Holiday Fruitcake
2 1/2 cups sifted flour
1 teaspoon baking soda
2 eggs, lightly beaten
1 (28 ounce) jar ready to use mincemeat (Borden's or Nonesuch)
1 (15 ounce) can sweetened condensed milk
1 cup walnuts, coarsly chopped
1 lb mixed candied fruit (2 cups)
walnuts, for decorating
maraschino cherry, for decorating

DIRECTIONS
Butter a 9 inch springform pan.
Line with wax paper.
Butter again.
Sift flour and baking soda.
Combine eggs, mincemeat, sweetened condensed milk, chopped walnuts and candied fruit.
Fold in dry ingredients.
Pour into pan.
Bake in 300°F oven for 2 hours, until center springs back and top is golden.
Cool thoroughly.
Turn out and remove wax paper.
Refrigerate, well wrapped, at least 24 hours before decorating, slicing and serving.

Thank you kind person, (Love the name Nines), anywho, I just did a MAKE-DO fruitcake with the only ingredients I could find, the candied pineapple and orange rind. Such desperate attempts like the one I just did is probably why fruitcakes get such a bad name..

I do make a mincemeat cake (similar to the recipe above) with extra apples and golden raisins thrown in. Soaked in rum...soo delicious!

My daughter requested strawberry rhubarb pie this year, (out of season, I know--just happen to have some rhubarb in the freezer, so she's in luck!) and I'll also be serving the French classic, Buche de Noel. Yum, yum :)

I don't bother with making fruit cakes anymore but my outstanding ones were made with fresh or frozen fruit .. not the candied ones. and lots of butter

Did they hold up for better than a month like those made with the candied fruit do?

Fresh fruit, not too sure about that, but thanks.. The beauty of a fruitcake is the curing process.. Just saying..

All our stores took out my yorkshire pudding AND all other British food and put in Chinese Food. No BS. My roast beef will have to go with my attempt at homemade yorkshire! Still pissed!
