For the seafood Gumbo, so far I have 5 pounds of gumbo shrimp, 6 pounds of Royal Red Shrimp, 1 pound Louisiana Crawfish Tails, 1 pound Blue Crab Claw meat, 1 pound Jumbo Lump Crab meat, 2 1/4 pounds sausage and 1 1/2 pound garden grown okra to throw in it.

We do the same at Christmas...heated serving platters of pastas, garlic bread, breaded chicken, and such all lined up on the table and the family can graze all day buffet-style. Piles of cookies, brownies, and such on another table.

Formal dining is for Thanksgiving, because the meal is the main focus.

I like lasagna also cuz they and be assembled early.....I did them yesterday and easy to pop into oven with garlic bread and served with a big bowl of salad on the buffet.....lots of people coming over Christmas eve so I'll be too tired to cook Christmas day.....

One year we got away with rib eye and tbone steaks for everyone. We were tired of not getting steaks like my dad and others had regularly because we usually had 7 in the house.

But we're doing the standard turkey, dressing, brussel sprouts, homemade cranberries, organic peas, pickles and olives, mashed potatoes. All the veggies are from the health food store. With a ham for new year.


We'll have chocolates and christmas cookies for desert.

Rum and egg nog. I'll have a touch of creme de cacao in my eggnog.

Everything from scratch heavily meat filled lasagna with way too much of the 4 expected cheeses as it should be. Complex salad with olive oil and balsamic glaze. Garlic bread, of course. Whole milk so cold it starts getting ice crystals.

We will do the same gumbo sans the crab. Ours starts with a whole chicken. Fry some turkeys injected with Chachere seasoning.
