Can Prions be destroyed?
Prions are very hearty proteins. They can be frozen for extended periods of time and still remain infectious. To destroy a prion it must be denatured to the point that it can no longer cause normal proteins to misfold. Sustained heat for several hours at extremely high temperatures (900°F and above, i.e 482.222 degree celcius) will reliably destroy a prion.

It's a novel virus. Meaning new. Unless there was secret human testing prior to this that a scientist has access to, they aren't going to know everything and precisely all at once.
