"I settled for making potato and bean burritos which were still pretty good with some smoked cheese (got a few cheese wheels a while back and they seem to be doing fine)."

Recipe for potato and bean burritos please.

Once had potato and hamburger burritos and loved them. Coworker said his wife made them so I couldn't get the recipe. Have salsa and canned green chilies, onions, garlic.
 Quoting: NotStarvingActress

Dice the potatoes and throw them in a pot of cold water, boil until they're soft.

Dice an onion.

Throw some olive oil in a frying pan, put onion pieces in, throw a lid on it.

Saute said onion pieces, flip them a few times in the process.

When onions are nice and sauteed (clear and just a touch black on the edges), add cooked red beans (I just dump the whole 600 gram jar in - cooking for a few people).

Liberally use Mexican cheat powder (burrito flavoring) to taste.

Finely chop a pepperoncini or two and sprinkle it in.

Add a few squirts of Tabasco sauce.

Mash the beans and ingredients with a fork, put the flame on low, stir/flip the mixture a few times until it is a nice thick consistency.

....

I'm still using pre-made burrito wraps (tortillas) because I still have them.

Heat each of them directly over a flame for a few seconds until they become soft.

Place them on plates.

-----

By now your potatoes should be soft. Drain the water, throw them back in their pot, add some Mexican cheat powder and a spoon of butter to help get it mixed in. Mix it all. The potatoes should be soft enough to fall apart.

-----

Throw the potatoes on top of the finished beans in their pan and spread them out so they create a top layer, grate a healthy amount of cheese on top of that to create a third layer, put the lid back on until it is thoroughly melted.

-----

Remove lid. Use a spatula to divide the pan into a number equal to the amount of burrito wraps you have.

Deposit each portion into a wrap so they each get an equal portion of all the layers of ingredients.

Wrap them so nothing will fall out the bottom.

Eat.

I have a friend/family member taking her son on his senior trip cruise next month

I’ve been warning her for weeks that taking a cruise isn’t a good idea

I point out each ship that’s been effected and she just says, well the cruise line says it’s safe and the travel agent hasn’t told me not to go

wtf

I can’t stand people who need to be told something that should be effing common sense

Her son even had pneumonia in December, and it was a weird illness, high fever, slight cough and that it, he missed two weeks of school

chuckle I'm a world traveler. If you read that recipe closer, you'll also notice it has Italian influences. chuckle

yeah, noticed the peperincini (sp?) ... gonna try that tonight with my beans & rice. doing 1st ever single serving to get an idea (4oz dry)

will saute onions & garlic when they're near done. a little liquid smoke.

tomorrow i make my usual big batch and freeze up individual servings for burritos. 1# pintos and a 5# ham shank to start ...
 Quoting: PO'd

The ham shank sounds like a good place to start.

It's a sad fact that absolutely no one outside of the American continents can actually make decent Mexican food.

I've been to dozens of "Mexican" restaurants in dozens of countries and they all fell short. So, I finally gave up on the restaurants and started cooking it myself, wherever I happened to be in the world.
 Quoting: TlvmmCpoft

i make decent food. i get no complaints when i cook for others

i'll soak a pound of beans tonight, rinse, then into the crock pot on high. 2 hrs later, in goes the ham shank until the meat is falling off the bone. i take the meat out then and add rice. once the meat cools a bit i take the meat off and shread it and put it back in ... then saute the veggies and toss that in ... seems to work. no added salt with the ham :)

trying the greek peppers tonight. surprised i never thought of it. i always have a big jar!

That does sound good.

I just had smoked ham in green beans and taters while kicking myself for not feeling up finishing the fruit tree pruning yesterday. I wore myself out the last few days. Now I may have to finish in between rain showers. Spring is coming on way to fast.

We do not learn from history because our studies are brief and prejudiced. In a surprising manner, 250 years emerges as the average length of national greatness. This average has not varied for 3,000years. The stages of the rise and fall of great nations seem to be:
The Age of Pioneers , The Age of Conquests ,The Age of Commerce ,The Age of Affluence ,The Age of Intellect ,The Age of Decadence.
Decadence is marked by: Defensiveness, Pessimism, Materialism,Frivolity An influx of foreigners The Welfare State A weakening of religion. Decadence is due to: Too long a period of wealth and power, Selfishness Love of money ,The loss of a sense of duty.
The life histories of great states are amazingly similar, and are due to internal factors. Their falls are diverse, because they are largely the result of external causes. - Sir John Glubb The Fate of Empires

A holiday for everyone else is traipsing around everywhere getting annoyed with each other. Arguing, spending a load of cash in a randomly crap restaurant. Ending up more stressed than when you started.

We've got garden plans along with some painting and maintenance things to do immediately.
We agreed to take 2 weeks and then reevaluate the quarantine. But I think we're staying in.
Going to teach our teen to can and do some electrical work.
Oddly, she doesn't seem excited by those things! Weird, huh?

I have a friend/family member taking her son on his senior trip cruise next month

I’ve been warning her for weeks that taking a cruise isn’t a good idea

I point out each ship that’s been effected and she just says, well the cruise line says it’s safe and the travel agent hasn’t told me not to go

wtf

I can’t stand people who need to be told something that should be effing common sense

Her son even had pneumonia in December, and it was a weird illness, high fever, slight cough and that it, he missed two weeks of school

I just did BBQ, she said a huge group is going and no one has backed out, no one has told us that it’s not safe yet, how will we tell the kids

I said “I quit” have at it

And I damn sure won’t be helping if either of them get sick or stuck on some island or out at sea, lol

She’s the kind that needs constant hand holding and directions, does nothing on her own volition

They are leaving out of Miami too, going to Caribbean on the largest ship carnival has supposedly, yahoo numbnutz

Eat.
