When prepping veges, I save all of the little cut off bits in a designated container in the freezer. I reserve drippings and bones from all meals and freeze them as well. Once a week I throw it all into a lobster size pot, and simmer with an extra bit of onion, garlic and herbs. Strain and use that for soup, risotto, to poach chicken or fish in, or make a stir fry and add a bit to make a sauce. It makes every dish better. When bread is getting hard, toast it in the oven and either break it up into chunks for croutons, or grind into breadcrumbs. Both can be kept in the freezer. I'm a big fan of the mini chopper, mini food processor. I don't have a fancy expensive one. Just a little $20 one. One of my favorite things to do is mince whatever bits of meat or veg you have, and mix them to make dumpling/ravioli filling. Just a tiny bit of any one thing goes a long way when mixed with tiny bits of other things! 3 mushrooms, a carrot, a 1/4 cup of cabbage makes enough filling for 30 dumplings. |

I'm not doing that anymore. I make sure I prepare only what I will eat, then eat it all. Now that you can't get as much of whatever sort of food you want, I'm thinking about how carelessly I dumped food before. |

Blanching prevents the breakdown on a cellular level when freezing veggies. It helps them retain structure. If you don't blanch they will turn to mush when you thaw them. Still good for soups or bread but not much good for other type meals like stir fry or casserole. |
