You nailed it. There is not that much possible scenarios for a pandemic, and a couple of parameters are Always quite Obvious: Flue like virus (as that is most contageous, and can spread as you can infect other people before you become ill), origin China or Middle East as most of real outbreaks come from there.

The reason Why in that roleplay they react about the same way as is done now for real is most probably gecause it is scientists who do know damn good how the world works. You are right it was a preparation, but not because they knew what was coming, they just did their homework very well, unlike a lot of people on this site.
And indeed, this is an exercice which is done on a regular basis
