Stores sold out of yeast? Make your own, it's simple.. | |
Anonymous Coward User ID: 63229486 United States 03/31/2020 02:43 PM Report Abusive Post Report Copyright Violation | Our stores are full to the brim now but this would have been useful a few weeks ago. I suspect once these government fraud checks arrive the people will blow them all on toilet paper and groceries again so maybe in a few weeks this could be useful again who knows? |

User ID: 77839169 United States 03/31/2020 05:15 PM Report Abusive Post Report Copyright Violation | 2 Cups of Corn Meal- Approx. 1/2 Cup of cane sugar (not processed white although it works) 1/2 Cup of GP flour (bread flour is the wrong chemistry) 1 Teaspoon of powdered Ginger Enough potatoes peeled, diced and cooked to make 1 cup of mashed potatoes Peel, cut into small cubes and cook the potatoes until soft in as little water as you can get away with (strong starchy water for fuel). Drain and mash, reserving about 1/2 cup of the potato cooking liquid. In a medium bowl add the 1/2 cup of potato liquid (cooled to between 105-107F.) to three packets of Active Dry Yeast- mix well. Set this bowl aside for 10-15 minute until the mixture proofs to foamy. Into a large bowl add the "working" yeast/potato water to: 1/2 cup flour, 1/2 cup sugar, 1 cup of cooled mashed potatoes, 1 tablespoon of ground Ginger. Set the bowl aside loosely covered with a kitchen towel until the mixture has risen with lots of bubbles. I use the dehydrator set to 105F as my proofing oven here. Start stirring in the cornmeal, a little at a time, until you have achieved a thick solid base that can be rolled out. Place on cornmeal lightly dusted waxed paper. It's easiest to use cookie sheets with a waxed paper covering to sandwich in the mixture. Roll out until about 1/8" thick. After the "dough" has been rolled out 1/8" thick, remove top sheet of waxed paper. This can then be cut into manageable-sized pieces and placed in a food dehydrator (on very low setting). When completely dry and well cooled, use a food processor to grind yeast mixture until it is crumbles into granules like commercial dry yeast. The colder the yeast pieces, the better they crumble. The yeast will store in an airtight container for up to a year in your freezer. When your supply starts to get low, just start over from Step One with 3 tablespoons of your homemade yeast mix. Use 1 tablespoon of this yeast to = one package of commercial yeast. This yeast mixture will be slower to proof/rise. |

When that happens I use C60 buckyballs. Or when some strange pandemic hit the earth. I make mine from scratch for pennies on the dime. I have no idea yet how this might impact my home made brew yet. |
