(Probably because most commercial yeast is actually a blend of several (hundreds, maybe?) different strains, each with certain temperature/moisture-related properties. For example, some can withstand much higher temps, or much lower temps... My understanding is that these 'blends' in commercial yeast came about because of the difference in baking conditions in, say, Denver (mile high atmosphere), than in Florida. It's not bad enough we have to pay for their food stamps but they have to be fed breakfast and lunch because their mamas won't get off their lazy asses and cook for their childrens!!! I have it, but does it go bad if you leave on the shelf. I have the Costco bag and it's at least 2 years old; been kept in the fridge. Just add 1 extra teaspoon (20% more) to the recipe and it works just fine. My issue is pizza dough for 2 large pizzas to feed my family takes 5 1/2 cups of flour. I only had enough in storage for a month, and this situation isn't looking to be over by then :( I'm already stretch-rationing sugar and salt. |
