Leftover mashups
Anyone else cooking too much for quarantine? I am guessing food prices are going to keep skyrocketing as the supply chains continue to weaken. Smithfield plant closing is gonna make an impact for sure. Farmers are already dumping food because it can't be distributed. I'm trying to be frugal and not waste things, although to be honest most of our leftovers go to the chickens or compost for our garden so it isn't truly wasted.

With 6 people in the house, 5 of them teenagers (see: eats constantly) and all of them enjoying cooking we have too many leftovers.

This morning it was leftover sauteed cabbage and onion vs leftover roasted potatoes and carrots with garlic and rosemary
We chopped them up really fine and made a hash that was ah-mazing. Topped it with an over easy egg and perfect breakfast.

Tomorrow I think we're going to try leftover rice vs taco leftovers (shredded chicken, beans, green onions, tomatoes, black olives) and top with cheese, lettuce, and taco sauce, maybe a few crushed cornchips to make Taco Fried Rice

Anyone else being creative out there? Either mashups or cheap tasty things you make from stuff typically in your pantry?
