Obviously you wouldn't only eat rabbit. Eating only one kind of meal all the time won't be very good for you no matter what it is. Humans need variety. But if you need some extra protein, nothing wrong with eating rabbit once in a while.

"Unclean"? Compared to chickens, pigs, and cattle raised in giant meat factories?

My family raised rabbits for food. Had a dedicated shed with cages floor to ceiling both sides. Typically harvested 10 rabbits a month. Would pressure can the meat when they started to reproduce too much, which was often. The rabbits had huge areas to run around and "reproduce". I did most of the cage cleaning, feeding, watering and rabbit skinning. Dad would .22 short them betwix the eyes for me.

Delicious when your mother is a great cook.

Rabbits are plentiful and grow quickly and taste great and, bonus, fur pelts.

Why are we not eating them???

I know they used to eat them all the time. In the Army, we had Rabbit frequently; it was great.

What gives?

My guess is that they're not profitable enough to sell on a wide scale. After you remove skin and head, there isn't a shole lot left. It's probably just way more profitable to sell birds or larger mammals
