If there is no beans it is not chilli. I have had Texas chilli and it's just spicy meat with sauce. Better than bean soup with very little meat. Only wimps cut their chili with beans. Better than bean soup with very little meat. Only wimps cut their chili with beans. Then they cuts fart for the next 24 hours. All beans need to be soaked in water for 24 hours before cooking. The beans become much more digestible after soaking. Rinse the soaked beans well and cook them with one tablespoon of baking soda added to the water. |

Historically it sure was used in the southwest. Masa flour is a fine thickner and adds a unique taste. Many chili cooks add it in competitions. I see nothing wrong with using pinto beans. It ain't originally Tex-Mex anyway. Chili originally has a Caribbean origin by folks who visited Latin America, and the Mexicans started changing it to suit local tastes. Whatever chili is now, probably is not like it originally started out. That is what cooks do. That is like burgoo. When it started out, it had to have wild game in it. |
