I am always looking for new tastes...and perfecting old tastes. I grow herbs, chives, garlic & hot peppers in my garden to add flavor to my cooking. I experiment with tastes all the friggan time. And until today (I'm in my mid fiddies) it never occurred to me to saute onions in bacon fat. If I am going to be damned...I am going to be damned for who I really am! |

That is more economical and tastes better than commercial bacon. Some people now have a "beer fridge" in the garage. If so, then you buy your pork and season it and place it on a rack with rock salt underneath. That draws out the moisture and dry cures the slab bacon. |
