Next time you are set to make chocolate chip cookies (what used to be called Tollhouse cookies), grind up some oatmeal into flour and substitute 1/4 to 1/3 of the flour with that. That is a fine Tollhouse cookie. It's delicious. It changes the structure for whatever reason makes it way better.

Also substitute some butterscotch chips for part of the batch as many grandkids have never ever had them. They're tasty. There were old recipes for "butter brickle" and they kinda taste like that.
