Slice.. I use a Jims slicer.. slide it in..crank.. boom.. instant uniform strips. Marinade strips again in dales. Add salt.. pepper..liquid smoke.. some worchestire sause.. when placing on racks..and ground pepper. 165 for 5-6 hrs. Boom! |

I dry mine on the cleaned oven racks with foil on the bottom of the oven for easy clean up.
